The Tojo area of Hyogo Prefecture, which is certified as a Yamada-Nishiki Special A district, is divided into three areas: Kami-Tojo, Naka-Tojo, and Shimo-Tojo. This sake is brewed exclusively with Yamadanishiki produced in the rice paddies of the Kami-Tojo area. You will enjoy its fresh aroma, mildly spreading flavor, and the naturally occurring gaseous sensation produced during the fermentation process.

Brewer’s description: Founded in 1791. Since the 1960s, the brewery has been producing high-quality junmai (pure rice) sake. The brewery aims to produce sake that is as essential to our diet as “Ginshari” (white rice), and that is as much a part of our diet as the food we eat. The company will continue to preserve the culture, history, traditions, and climate of sake brewing as a Kyoto sake brewer by maintaining the brick chimneys, the brewery warehouse built in the Taisho era, and the Mankyoin, a traditional Kyoto-style guest house.
