About an hour’s drive northwest of central Kyoto. Haneda Sake Brewery is located in the town of Keihoku, about an hour’s drive northwest of central Kyoto, in the beautiful Kitayama cedar mountains. The brewery uses pure water from the upper reaches of the Katsura River, surrounded by forests. The rich nature of the satoyama, with its clean air, pure water, and winters that can get as cold as minus 10 degrees Celsius, is a great help in sake brewing.
