This sake is brewed with rice produced in Ohara, located in the northern part of Kyoto City, where the brewery staff participated in the rice cultivation process. With a Daiginjo standard rice polishing ratio of 50%, it has a fresh aroma and elegant taste with a clean aftertaste. Kinuhikari rice grown in Ohara, Kyoto is used.

Sake brewery introduction : Fujioka Sake Brewery
Brewer’s description: Founded in 1902. After more than 10 years in the brewery, Masaaki Fujioka, the fifth generation of the Fujioka family, launched the Souku brand, which has revived the brewery and has attracted much attention in the industry. The family motto of the Fujioka family has been passed down from generation to generation: “Good sake always leads to heaven and leads to people.” Based on this belief, the brewer himself is the toji in charge of production and carefully brews all sake by hand, sparing no time or effort. The sake is named “Souku” (meaning “blue sky” in Japanese) in the same way that looking up at the blue sky makes one feel refreshed and peaceful.
